Last night at my bible study we discussed our "patterns" for the upcoming year. It might sound a little different, but one thing that they have been focusing on at church is getting rid of setting goals. Goals can be tough. While they are great in many ways, sometimes they can be unrealistic and hard to achieve, and occasionally they can leave you feeling defeated and disappointed. We talked about how beginning a new year shouldn't be about setting goals for oneself that you aren't sure whether or not you'll reach, but about changing and gaining patterns. For example, if you say you're a night owl, but you've never tried to adjust your routine and become a morning person, of course that is the pattern that your body is used to. We discussed how picking a word to focus on for the year can be helpful when it comes to changing your patterns and your lifestyle. It can help you remember what to focus on, and help your focus remain on Him.
My two words for the year are patience and community.

Patience in waiting on God to show me the path for my life. Patience in the hardships. Patience in waiting for the right job. Patience in waiting on the perfect timing for marriage to Sean. Patience in making moves and improving myself.

Community will remind me to branch out and meet new people. It will help me remember that God didn't create me to sit alone and only have my family and Sean as my friends, but he made me for a purpose. He made me to be a friend to others, and for others to be a friend to me when I need them. Community will help my relationships grow and thrive.

On November 17th Sean and I celebrated our 5 year anniversary! We have been through so many ups and downs together, but I wouldn't trade my time with him for anything. He means so much to me, and I know that everything we've faced has just made us stronger as a couple. We're the perfect match, and I can't wait to see what the next five years hold for us! We decided we wanted to do something new and fun in honor of our anniversary, so we put on our warm clothes and hit the road for Asheville! 

It was such a beautiful day, with perfectly crisp, cold weather and an absolutely amazing Blue Ridge sunset. The Biltmore House was all decorated for Christmas with gorgeous trees, twinkle lights, and countless antique ornaments covering the house. We ate great food, drank delicious peppermint lattes, and got a head start on our holiday festivities. If you live in NC and haven't visited The Biltmore for Christmas, I definitely recommend it!

With the weather getting cooler there are two things that you definitely must add back into your life and fall routine... game day food and a signature sweater.

This sweater dress, which I found at Goodwill last fall, will forever be one of my favorite finds. It's so cozy and comfy, and looks perfect with a cute heeled bootie. I'm a little obsessed with it. Here's how I styled it last year...

Isn't that just so stylish yet sleepy? I love a lazy day outfit. Oh and speaking of lazy days... the other day, as I was laying on the couch watching the Panthers game, I started craving some game day food. I knew I wanted something hot and preferably some type of dip (my favorite), but I wanted it to be healthy, so I whipped up my own version of paleo hot spinach dip. So delicious! Here's the recipe...
Spicy Spinach & Caramelized Onion Dip

Ingredients
-1 bag of spinach
-1 tablespoon EVOO
-1/2 teaspoon garlic powder
-salt and pepper

-1 yellow onion
-2 teaspoons olive oil

-1 avocado
-1/2 tsp red pepper flakes
-1 teaspoon hot sauce
-1 tablespoon spicy mustard
-1/3 cup coconut milk
-1 tablespoon creamy tahini dressing
-1 teaspoon pepper
-1 teaspoon salt
-1 teaspoon lemon juice

What To Do
In a large skillet, saute a large chopped yellow onion with 2 teaspoons of olive oil until caramelized and golden. Dump into a food processor. Add 1 chopped avocado, red pepper flakes, hot sauce, spicy mustard, coconut milk, tahini, pepper, salt, and lemon juice. Pulse and blend until slightly smooth.

In the same skillet, saute 1 bag of spinach with 1 tablespoon of EVOO, 1/2 teaspoon of garlic powder and desired salt and pepper until completely cooked and wilted. Add spinach to the food processor and blend with other ingredients. Add salt and pepper to the completed dip, to taste.

Pour dip into an oven safe bowl, and sprinkle the top with smoked paprika. Cover with aluminum foil and bake for 15 minutes at 375.

Eat with homemade sweet potato chips, sliced bell peppers or corn chips! Enjoy!

Since I know I'm going to be in Charlotte longer than I ever planned... I've decided to try and "explore" the city that I've lived in for over 20 years of my life! I'm all about some local flavor, especially compared to cities like Boston and New York, and although Charlotte isn't quite known for it's local flare, I like to hunt it down until I find my favorite spots that are unique to the Queen City. Since I'm a hard-core coffee connoisseur, my go-to adventure is seeking out local coffee shops. Rush Espresso is my new favorite, located in Ballantyne Village, but I also found a little place called Mugs that I tried out with Sean.

One of my favorite things to do is to get up and get a jump start on the day by going out for coffee or breakfast. Throw on some basics, sneakers and your boyfriends tee if you want some extra comfort, forget that messy bed-head, and drive to your ideal spot. Mugs was so much fun to try out! Any quality time I spend with my love is perfect to me. The atmosphere wasn't my favorite, but I got an absolutely delicious almond milk brown sugar latte. It was the perfect ratio of sweetness to espresso. I would definitely go back to get a latte to-go! Yum.

These last few days have been a little crazy. Last Thursday I took a spur of the moment trip to Greenville to visit my boyfriend! He hasn't been able to come home yet with everything that's going on, so when I heard that my neighbor was making the trek down to ECU in the snow, I decided to go along with her to save money on gas and see the love of my life!
It was a low key weekend. All we did was relax, watch movies, cook comfort food, eat way too much,  sip on coffee, play in the snow, hug on Cubbie and hug on each other. I missed him so much! While I was there we started watching the Netflix series House of Cards and instantly got hooked! This show is seriously amazing. You need to check it out! It's intense, sarcastic, and a crazy unique perspective on politics. We already have less than half left before we get through the whole first season.

Monday night I got home from Greenville, ate dinner, caught up with my parents, and then went straight to sleep. Tuesday I had a big interview with a company I've been in contact with for a couple weeks now, located about 2 hours outside of Charlotte. I went to my interview, which was way shorter than I imagined, and then changed into comfortable clothes and treated myself to a delicious lunch for one in the middle of downtown.
The whole interview/meet-and-greet experience didn't go as I expected it to, but it was definitely an adventure that made me stronger! If you wanna hear God laugh, tell him your plan, right? That's my favorite quote these days! This one is pretty legit, too...
Sorry for the lack of posts this week! I've been busy, as you can see. What have you been up to lately?
